Lemon Ginger Immunity Soup
This is medicine in a bowl. Every ingredient in this soup serves a critical purpose in bodily and cellular function - From the antioxidants in the ginger, to the heavy metal detoxifying properties in the cilantro. Heal from the inside out with this deliciously tangy and herby soup.
Ingredients:
Makes 1 single serving.
• 1 Cup Bone Broth
• 4oz Chicken
• 1/2 a lemon
• 1/2 of a Zuchini
• 2 Cloves of Garlic
• 1.5 Tablespoons Fresh Grated Ginger
• 1/3 cup cilantro
• 1/3 cup basil
• Salt & Pepper to taste
• Sprinkle of cinnamon
Topping:
• Dollop of Greek Yogurt
• Crumbled Feta
• Fresh Cilantro
• Drizzle of Extra Virgin Olive Oil
Method:
Prepare the rice (you can also use any pasta noodles you'd like).
Add Extra Virgin Olive Oil to a skillet on medium heat, add your chicken breast and cook until done (alternatively, you may cook the chicken breast any way you'd like).
In a separate pot on medium/high heat, add sliced zucchini and minced garlic.
After about 1 minute add bone broth and grated ginger, cover and reduce the heat to medium. Let cook for 5 minutes.
Take some of your soup (including some chunks of zucchini) out of the pot with a ladle and add to a blender. Fill 1/3 of the blender with soup. Reduce the heat of the soup to low while doing this.
To the blender, add basil, cilantro and lemon juice. Blend the mixture until smooth.
Pour the blended mixture back into the soup pot, add in the cooked chicken breast along with salt, pepper, cinnamon and any other seasonings of choice.
Cover and let simmer for an additional 3-5 minutes before serving over rice.
Choose your own journey with toppings. I add a scoop of greek yogurt, feta cheese, extra cilantro and a drizzle of olive oil.
